Not only is he Michelin starred, Ken is also widely regarded as the top truffle chef in North America, having served his truffle menu for 35+ years. Ken remains the first and only American chef invited to cook for the Italians at the famed Alba White Truffle Festival and is a Master of and knighted by the Order of the Knights of the Truffle and Wines of Alba.

The most important qualities for truffles are aroma and firmness, which are direct indications of freshness. The truffles you will receive are the absolutely freshest available in North America. They are overflowing with truffle aroma and are firm in consistency, which make them highly sought after by Michelin star chefs like Ken. These truffles are hand selected to meet the stringent quality and freshness standards of Chef Ken.

 

Handling & Storage

The most important three rules for handling and storing truffles are:

  1. Use them within 5-7 days, as truffles have a half-life of about 5 days.
  2. Keep the surface of each truffle clean and dry. Do wrap each individual truffle in clean paper towel and change every day to wick away any moisture. Do store truffles with raw eggs in a sealed container. The truffle aroma will penetrate the egg shells and infuse the egg yolks.
  3. Do NOT store truffles in rice. Rice desiccates truffles. Do NOT freeze truffles. Freezing changes the aroma and the texture completely while reducing the potency.
