At this year’s Napa Truffle Festival Marketplace at Oxbow Public Market, attendees had the opportunity to see Chef Brian Santos of Eiko’s in action as he created Kobe Beef Nigiri with Shaved Black Truffle – a Japanese dish for beef lovers with a truffle twist. The really news is that you can make this at home – the recipe is easy (sort of)!
Eiko’s at Oxbow is a full-service seafood marketplace and sushi bar with Head Sushi Chef Brian Santos at the helm. Brian prepares classic sushi rolls, as well as specialty sushi and sashimi, and especially likes to work with the tender and flaky miso cod. He is married with one daughter and, when not cooking, he’s traveling to learn new culinary traditions, or rooting passionately for the Warriors and 49ers.
