A truffle orchard tour/dog training demo follows the Grower Seminar where you’ll be greeted with a glass of Robert Sinskey wine.
Truffle orchards are highly profitable, and are an excellent and viable way to diversify land usage. European black truffles are the most sought after truffles in the world. Also known as “the black diamond of the kitchen,” their demand far exceeds the supply. Current black truffle production is almost exclusively in Europe, but now these truffles can be cultivated in select areas around the world. Many parts of North America, including Napa and Sonoma, offer particularly suitable climates and soil.
Join Chief Scientist Dr. Paul Thomas and Chief Truffle Officer Robert Chang of American Truffle Company, and Rob Sinskey and vineyard/orchard manager Kari Flores of Robert Sinskey Vineyards Truffle Orchard as they provide insights into managing the first scientific truffle orchard planted in the Napa Valley area.
Dogs are an integral part of harvesting truffles. There is no better machine to sniff out mature truffles than the highly sensitive nose and the extreme mobility of a properly trained dog. Just like rigorous science is required for successful truffle cultivation, a scientific approach is key to effective truffle dog training. ATC’s associate CPDT-KA dog trainer Alana McGee will demonstrate how truffle dogs actually find truffles in the Sinskey orchard.
